Kohlrabi is one of the most versitale vegetables I have ever cooked! I do not peel it, I slice it thin and sautee it in avocado oil with garlic, onions and sea salt. I also roast it with carrots, onions, radishes, turnips and I have made cole slaw out of it, as well as, grated it added onions and fried it for hash browns. It is sweet and tender and is also great raw and dipped into your favorite dressing.
